Blarney Brewing Company is an independent Cork brewery founded on a simple belief: great beer shouldn’t be overpriced or overcomplicated. We craft crisp, modern Irish beers with real flavour and wide appeal—designed to pour easy, drink well, and bring value back to the pint.
Where we started
The idea was sparked over a pint in Blarney’s Castle Hotel. From that moment, founder Pat Falvey set out to challenge the status quo—where beer prices kept creeping up and choice was controlled by macro brewers. By early 2024, he’d acquired and repurposed a brewhouse, partnered with hospitality expert Duncan Blair, and brought on seasoned brewer Ronan Russell, whose experience at leading Irish breweries gave the operation its technical backbone. Two years and €1 million later, Blarney Brewing Co was ready to pour.
We don’t just talk green
Our brewhouse uses a quarter of the energy of comparable operations thanks to high-efficiency heating and a modern brewing system. And with plans underway for a zero-carbon facility beside Inniscarra Lake, we’re building a circular brewing model that cuts waste, reduces water usage, and supports long-term growth—without draining the planet.
Our Process
At Blarney Brewing Co., we keep things honest—not just in flavour, but in how we make every pint. Here’s a simple look at how our beer comes to life:
Milling
Cracking the Grain
We start by milling the malted barley to break the grain husks and expose the starches inside. This sets the stage for fermentation later on.
Mashing
Extracting the Good Stuff
The crushed grain is mixed with hot water in the mash tun. This activates natural enzymes that convert starches into sugars—creating a sweet liquid called wort.
Lautering
Separating the Wort
The wort is drained from the grain bed and filtered, leaving behind the solids. What’s left is clean, sugar-rich wort ready for the next step.
Boiling
Adding Flavour
The wort is brought to a boil and hops are added. Hops give bitterness, aroma, and balance to the sweetness of the malt.
Fermentation
Turning Sugar into Beer
After boiling, the wort is cooled and transferred to a fermenter. Yeast is added, and over several days it converts sugars into alcohol and CO₂—creating beer.
Conditioning
Letting It Mature
The beer is cooled and conditioned to allow flavours to settle and smooth out. This is where it gains clarity, carbonation, and balance.
Packaging
From Tank to Tap
Once it's ready, we package it for kegs or cans—fresh, clean, and ready to pour.
